SMOTHERED CHEESY SOUR CREAM CHICKEN

The recipe is delicious. Super easy to throw together and baked in an hour. I did double the sauce and used two slices of mozzarella on each breast. My husband really liked this. It would be really easy to adapt for one person or for several. It was so moist! Paired it with steamed veggies, wild rice, cranberries and crusty bread. We do a lot of RVing and I think this would make a great meal since you need so few ingredients for the entree.



This is soo good! I didn’t take a picture cause the presentation isn’t amazing, but the flavor is perfect. I didn’t use Parmesan, used shredded cheese instead. Didn’t have mozzarella either



SMOTHERED CHEESY SOUR CREAM CHICKEN

Ingredients

  • 4 chicken breasts
  • 4 slices mozzarella
  • 1 cup Hood sour cream
  • 3/4 cup Parmesan, freshly grated, divided
  • 1 tablespoon corn starch
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt, freshly ground
  • 1/2 teaspoon pepper, freshly ground
  • Parsley, chopped, for garnish

Instructions

  1. Preheat oven to 375 degrees.
  2. Coat rectangular baking dish with a little olive oil.
  3. Mix sour cream with a half cup of Parmesan, salt and pepper, oregano and basil, garlic powder and cornstarch together.
  4. Lay your chicken breasts in baking dish, top each with a slice of mozzarella  and smother the chicken with the sour cream mixture. Top with 1/4 cup remaining  Parmesan.
  5. Cook for 1 hour. 
  6. Serve chicken over rice. Top with chopped parsley for garnish.
